Lazy Lunch Ideas from the Lazy Girls

Finding the time and energy to organize healthy lunches can get extremely hard in our busy lifestyles, but the Lazy Girls have found an easy solution to this problem! 


Lazy Girl F and I work together in an office environment where it is easy to be tempted to make unhealthy lunch choices - especially when your colleagues in the next cubical are enjoying cruelly deliciously smelling Thai take away! 

So we work together to arrange lunch. Each week one of us takes a turn to bring in the ingredients we need to make our tasty mountain bread toasties. Essentially we eat the same thing every day, but we make slight adjustments to keep variety. 

We also have a large variety of healthy snacks stashed away at work to protect us from the 3:00pm cake and chocolate cravings!


The key is having a supportive Lazy Girlfriend to help share the responsibility and keep you on the right track. 

Mountain Bread Toastie Recipe
It's pretty simple to make this toastie, and easy to modify for your own personal taste and variety. We normally use capsicum, semi-dried tomatoes, mushroom, baby spinach, ham and low fat cheese for the filling. Spread pizza sauce onto half of the mountain bread and add filling. The key is not filling up too big (believe me we have learnt from experience)! Fold the other half of the mountain bread over the top and place in a sandwich press.

Tip for snacks - buy them in small individual packets to control portion size!
  • almonds
  • fruit
  • chopped veg and healthy dip
  • celery with natural almond spread
  • air popped popcorn
  • rice wheel crackers
  • soy rice snacks
  • chiobani yogurt
  • boiled egg
